Turkish Künefe Dessert

I once took some colleagues from work to a Mediterranean restaurant to experience kosher food. We were comparing notes on food and culture when she shared with me that if I never had “Künefe” (here’s how to pronounce it); it means I never tasted the best dessert ever created.  She emailed me the recipe, and after many days of her reminding me that I need to try it, I decided to make it.

I have already made it twice–once without the pistachio topping for friends that are nut-allergic, and once with it. It is incredible both ways. The best way to describe the taste is sweet, buttery croissant.  The shredded mozzarella used in this dessert plays a pivotal role in providing a soft, creamy richness that is unparalleled.  One bite is never enough!

  • 1 Lbs Shredded Fillo dough
  • 8 ounces Unsalted shredded mozzeralla I used Natural and Kosher mozzarella cheese
  • 1 Cup Butter 2 sticks
  • 1/2 Cup Milk
Sugar Syrup
  • 2 Cups Sugar
  • 2 Cups Water
  • 2-3 TBSP finely ground pistachios
  • 4-5 drops Rose Water optional
Servings: People
  1. Preheat Oven to 375F.
  2. In a medium pot, combine sugar & water until boil. Remove from hear and let it cool.
  3. Remove Shredded dough and further chop it into smaller pieces using a knife or food processor.
  4. Melt butter in a large non stick pan and mix in dough. Mix continuously until well combined.
  5. Add milk and mix until fully absorbed
  6. In a round pan, mix half of the dough into the pan and press down with a spatula or hand.
  7. Add cheese and top with remainder of dough. Press down with a spatula.
  8. Add to oven for 45-50 minutes until golden brown
  9. Remove the Künefe from the oven and pour the cold sugar syrup over it. Let it sit for 5 minutes
  10. Serve Hot and Enjoy!
