Before we leave for work, the notorious question always arises: “What’s for lunch?” The answer has to be something quick and readily available. The other day, lunch was Turkey Avocado Cranberry Salad. We like to keep our options, ideally, something high in protein to keep us full and spring mix topped with turkey and avocado does the trick. (My husband only eats salad if it has avocado.) It needed a bit of pizazz, though.
I quickly reached for my YumTee Cranberry Mix, which is a blend of seven different nuts with craisins and gave a healthy sprinkling across the top of the salad. I took an extra second to fan out the avocado as I pulled away its peel—something to make it look extra special–to make him feel extra special when he is at work :).
