Tomato Arugula Salad

This is one of my favorite salads.  The dark green arugula provides a clean, peppery taste and perfectly complements the refreshing juiciness of sliced beefsteak tomatoes. Sliced scallions sprinkled on top of the tomatoes give a great color contrast and add in a welcome mild, green sharpness.

I serve this salad on a long rectangular white platter which makes the gorgeous colors pop, and its enticing elegance really speaks for itself.  I hope you enjoy!

Ingredients
  • 1 BOX PREWASHED ARUGULA
  • 1-2 BEEFSTEAK TOMATOES--THE REDDER THE BETTER!
  • 3 TBSP SLICED SCALLIONS
  • SALT TO TASTE
  • 3 DASHES COARSLY GROUND BLACK PEPPER
  • 3 TSP RED WINE VINEGAR
  • 2 TBSP EXTRA VIRGIN OLIVE OIL
  • EXTRA ADD-ONS:
  • • CRUMBLED FETA CHEESE
  • • SLICED FRESH MOZZARELLA
  • • 1/2 DICED AVOCADO

Instructions
  1. SPREAD THE ARUGULA ALONG THE LENGTH OF THE PLATTER.
  2. FAN OUT SLICED TOMATOES ON THE ARUGULA
  3. SPRINKLE SALT GENEROUSLY ON THE TOMATOES
  4. SPRINKLE 3 DASHES COARSELY GROUND BLACK PEPPER ACROSS THE TOMATOES.
  5. DRIZZLE WINE VINEGAR AND OLIVE OIL.
  6. TOP WITH SCALLIONS AND ADD-ONS AS DESIRED.
