Super Easy One Dish Chicken and Rice

Hey everyone! Its been a long while since I posted a recipe here, but I am so happy to be back posting simple recipes the whole family will love! (My website took a back seat over the summer,  but I was still very active on Instagram though I hope you were following me there @koshermoms).

This recipe that I’m about to share with you came out of desperation. I needed something insanely easy to put together with minimal prep and cleanup. Sometimes the best (and easiest) dishes come together on the fly, this is definitely one of those!

One note, this recipe really needs to be made in a Pyrex vs a disposable 9×13. Yes I know that means there is a dish to wash, but you wont get that amazing crispy caramelization of the rice if you use disposable. Trust me here, Pyrex is an absolute must!

Ingredients
  • 4 boneless/skinless chicken cutlets I use white meat
  • 2 cups jasmine rice
  • 4 TBSP onion soup mix
  • 1 TBSP Montreal chicken seasoning
  • 2 TBSP olive oil
  • 3.5 cups Water
Servings:
Instructions
  1. Preheat oven to 350 Liberally spray a 9x13 Pyrex dish with cooking spray
  2. Place rice and onion soup mix in the Pyrex
  3. Place chicken cutlets on top of the rice
  4. Sprinkle the chicken seasoning over the cutlets
  5. Pour the olive oil over the chicken and rice.
  6. Pour the water over the rice.
  7. Cover well and cook for 45 minutes. Eat fresh and enjoy!
