Spaghetti Squash “Alfredo”–It’s in quotes.  

This low carb dinner flop was created with, really, I swear, the very best of intentions.  I just wanted Italian food, and also to keep off a stubborn few pounds.

Trying to fake the glorious high carb, high fat Italian dish of fetuccine with Alfredo sauce, with spaghetti squash and part-skim ricotta cheese, was an atrocity! However, I somehow persisted with the task—probably (definitely) out of sheer hunger–saying to myself, “it might actually taste okay”, and “it may actually go down”. I even tried broiling the top layer of it to provide what I thought would be a helpful dose of dark brown, crispiness. It looked respectable in the oven, sizzling away, as if to say “I might actually taste okay…”

It lied.

It was a mass of gritty, yellow shoelaces.   I ate yogurt that night, for those of you who might be concerned!

So the lesson learned here, is if you get the urge for Italian food when you are trying to stick to low-carb, save yourself and others! Just make Zoodles instead.

  • 1 tsp onion powder
  • 1 dash savory spice mixture of your choice
