Melt In Your Mouth Ribs

Walking through Evergreen Kosher Supermarket in Monsey, NY, one can expect to find great quality products and incredible cuts of meat. So when I saw this gorgeous looking rack of ribs laying there calling my name, I just couldn’t resist! Especially, being the Shabbos before Super Bowl Sunday and with all the hype around it, how could I not make ribs for Shabbos?

This is a simple, but great recipe that will make the meat fall off the bones. The concept is: marinate the meat with the rub for 4 hours or overnight , put it on a low heat for 2.5 hours in your oven, and grill for the last 30 minutes or until the meat looks caramelized. Perfecto! You now have ribs that have an awesome grill flavor that just melts in your mouth! Bon Appetite!

Ingredients
  • 1 Rack ribs See Note#1
  • 1/4 cup dry rub
  • 1/8 cup lemon juice See Note#2
  • 1/2 cup BBQ Sauce

Instructions
  1. Rub ribs all over with lemon juice. See Note#3
  2. Coat ribs with dry rub.
  3. Cover and marinate in the fridge for 4 hours or overnight
  4. Preheat oven to 300° F.
  5. Bake in the oven for 2 1/2 hours
  6. Remove from oven & pour off liquid
  7. Brush bbq sauce over all sides of rib
  8. To finish ribs on the grill, remove from the pan and place ribs on the grill over direct but low heat, basting and turning a few times for about 10 minutes. See#4
Recipe Notes

#1 Ask your butcher to remove the silver membrane on the back of the ribs or you can do it yourself

#2 or a half of fresh lemon. It should be enough to coat the rack of ribs.

#3 Some people use mustard

#4  if you do not have a grill you can complete this in the oven by setting the oven to broil and return ribs to the same oven rack, basting and broiling about 5 minutes per side Keep an eye of it so it does not burn.
