Iced Pina Colada

Do you like Pina Colada? We sure do. This ice-blended classic cocktail can be made with or without alcohol. Just be sure to label the pitchers clearly if you make both types, and perhaps store them out of reach of children. Unless, perhaps, you want some funny stories about mix-ups and kids who couldn’t read; or kids bringing their cups to the adult table at a Kiddush in search of more Pina Colada; (all jokes aside, let’s not have any drunk kids on our hands!)…or family members who love Pina Coladas but can’t handle their liquor…I’m gonna stop now;)

Ingredients
  • 12 ounce can Cream of Coconut I use Coco Lopez, and run the can under warm water to loosen the cream inside.
  • 12 ounces Pineapple Juice Since the pineapple juice is an equal amount to the coconut, I actually use the empty can to measure out the pineapple juice!
  • 10 ounces Rum or leave out the alcohol...
  • 4-5 cups ice cubes

Instructions
  1. Blend all ingredients together in a blender until the ice cubes are fully processed, and pina colada has a slushy texture.
  2. Pour into serving cups and garnish with mini umbrellas.
  3. NOTE: This cocktail can be made Erev Shabbos and stored in a covered pitcher in the freezer. Just thaw the Pina Colada about 2-3 hours before serving, and use a fork to break up the icy chunks so it will pour smoothly.
