It’s interesting to note what actually qualifies as a recipe to people. We all have things that we cook that we do by rote and never actually considered that its a real recipe.  Is throwing some spices on a piece of fish, or putting olive oil, salt on pepper on every single vegetable under the sun for roasting a real recipe? The short answer is- YES! Some cook books are made up of recipes that have laundry lists of ingredients, while others only have recipes that require a few, but, they are all recipes in their own right.

So, here is another one of my “dump into a pan and cook” recipes. I used to be embarrassed to share these really simple ones, because I didn’t think it was worthy of being called a recipe. But then I realized, that if you are like me, having a really easy recipe at your fingertips is always welcome.

PSA!!!!! The gravy that forms from the sauce mixed with the chicken drippings is AMAZING!!!!!!!!!! You’ll need to serve it with something to sop it up with, so really its your choice between crusty sourdough, rice or a straw, either way enjoy it and let me know what you think !

Ingredients
  • 1.5 lbs chicken cutlets cut into cubes
  • 1/4 cup EXTRA VIRGIN OLIVE OIL
  • 1/4 cup Honey
  • 2 heaping TBSPS onion soup mix
Servings:
Instructions
  1. Preheat oven to 375
  2. In a baking dish, combine all ingredients until chicken is well coated.
  3. Cover and cook for 45 minutes.
