Garlic Basil Sourdough Toast with Avocado and Sunny Side Up Egg

On a rare day off from work, I was loving the idea of not needing to leave the house! When figuring out what to eat for brunch, I came up with this simple delicious toast. The herbaceous basil in the cheese, lusciousness of the runny yolk, and cool creamy avocado work so well together! These ingredients working together elevates this toast to “I would pay for that” status. It is so easy, try it for yourself!

Ingredients
  • 1 Slice Sourdough bread (if you don't have sourdough, use any sturdy slice)
  • 2 Slices Natural and Kosher Garlic & Basil Meunster Cheese
  • half Avocado sliced
  • Salt and Pepper

Instructions
  1. Place the slices of cheese onto the slice of bread so the entire surface is covered.
  2. Toast in a toaster oven at 425 , until cheese is just melted
  3. Meanwhile cook the egg and slice the avocado (See below for instructions on how to cook a perfect sunny side up egg)
  4. Once everything is ready, build the toast by putting the sliced avocado on top of the cheese, then the egg on top of the that. Sprinkle with salt and pepper and dig in!
Sunny Side Up Egg
  1. Pour a little oil or clarified butter into a nonstick pan and heat over medium-low heat. Crack 2 eggs into a bowl and inspect them. If everything is OK, slide the eggs into the pan.
  2. If the eggs sizzle immediately when they hit the pan, remove them from the heat right away and reduce the flame or the temperature on your burner. You don't want the edges of the eggs spitting and fluttering in the heat.
  3. Cook eggs slowly until the tops of the whites are set and yolk is still runny, about 5 minutes.
