Brined Roasted Chicken with Broccoli
Aromasong Poultry Brine
Aromasong Salt Blends
I used Sunny Rosemary Lemon for Chicken and Spicy Delta Cajun for the Broccoli
Enough to cover the chicken
Follow the package directions on how to brine the chicken, and leave it for 6 hours fully covered in brine in the refrigerator. I used a large ziploc bag for this step.
Remove chicken from brine and let rest for 1 hour at room temperature
Preheat oven to 425F
Rub olive oil over the chicken
Sprinkle Aromasong Blend onto the chicken
Place chicken, breast side up in roasting pan for 30 minutes in oven, uncovered.
Turn chicken over and cook until internal temperature reaches 165F, about 20 minutes.
Drizzle olive oil over the broccoli and sprinkle with Aromasong Blend
Roast in oven uncovered for about 20 minutes, or until done
