Brined Roasted Chicken with Broccoli

What is brine you might ask? I had that same question, and was a non-believer until I tried it. Brining chicken creates the most wonderful flavor. When you normally roast, bake or grill a chicken, the outside skin or layer gets all the flavor while the inside does not. This is where the benefits of brining come in. Marinating the chicken in a pickling solution moistens every layer and infuses it with flavor. The best part is, the leftovers of this chicken can be thrown into a chicken soup to reinvigorate a leftover pot of soup.  The flavor is amazing!

Ingredients
  • 1 whole Chicken
  • 3/4 cup Aromasong Poultry Brine
  • Aromasong Salt Blends I used Sunny Rosemary Lemon for Chicken and Spicy Delta Cajun for the Broccoli
  • 1 lbs Broccoli
  • olive oil Enough to cover the chicken

Instructions
Roasted Chicken
  1. Follow the package directions on how to brine the chicken, and leave it for 6 hours fully covered in brine in the refrigerator. I used a large ziploc bag for this step.
  2. Remove chicken from brine and let rest for 1 hour at room temperature
  3. Preheat oven to 425F
  4. Rub olive oil over the chicken
  5. Sprinkle Aromasong Blend onto the chicken
  6. Place chicken, breast side up in roasting pan for 30 minutes in oven, uncovered.
  7. Turn chicken over and cook until internal temperature reaches 165F, about 20 minutes.
Roasted Broccoli
  1. Drizzle olive oil over the broccoli and sprinkle with Aromasong Blend
  2. Roast in oven uncovered for about 20 minutes, or until done
  3. ENJOY!
