Breakfast for Dinner

Meals in our house are usually simple and always cost effective. I had an extra loaf of bread in the freezer and what seemed like a million dozen eggs in the fridge. So when I made my meal plan for the week, I wanted to incorporate these extras that we had on hand. I decided to make french toast, a family favorite, accompanied by a fruit salad. I used whichever fruit I found at home. The kids loved it and I was very happy with this easy and relatively healthy meal.

Ingredients
  • 1 loaf whole wheat bread
  • 4 Eggs
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 1/2 cups low fat milk
Fruit Salad
  • 1 can mandarin oranges drained
  • 1 can peaches drained and diced
  • 2 Apples diced
  • strawberries washed and diced
Servings:
Instructions
  1. Stir the eggs, vanilla, cinnamon and milk together in a large enough bowl that the bread will fit in
  2. heat a large skillet with some Pam spray (or butter if you like)
  3. dip the bread into the egg mixture till coated, not totally saturated
  4. put the bread in the pan and cook on each side till browned and egg mixture is cooked through.
Fruit Salad
  1. Cut up the fruit and mix together. I like to do this before cooking the french toast so the fruit has time to marinate together.
